OVERNIGHT BLUEBERRY COFFEE CAKE


1 egg
1/2 cup plus 2 tablespoons sugar, divided
1 1/4 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/3 cup milk
3 tablespoons butter or margarine, melted
1 cup fresh blueberries

In a mixing bowl, beat egg and 1/2 cup sugar. Combine flour, baking powder, and salt. Add alternately with milk to sugar mixture, beating well after each addition. Stir in melted butter or margarine. Fold in berries. Pour into a greased, 8-inch square baking pan. Sprinkle in the remaining sugar. Cover and chill overnight. Remove from the refrigerator 30 minutes before baking. Bake at 350 degrees for 30-35 minutes. Serves 9.

CHICKEN AND DUMPLINGS

In a large saucepan, saute' in 1/4 cup butter
1/2 cup chopped onion and 1/2 cup chopped celery until soft.

Add:
1/2 cup flour
2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried basil
4 cups chicken broth

Bring to a boil. Cook and stir for a minute.

Add:
1 10 ounce package of frozen peas


Reduce heat to about medium, stir constantly and cook about 5 more minutes.

Add:
4 cups cooked, cubed chicken
Stir in the chicken and pour into a greased 13x9 inch baking dish.

To make the dumplings:
2 cups buttermilk biscuit mix
2 teaspoons dried basil
2/3 cup milk

Combine above in a medium bowl and mix with a fork until moistened. Drop by teaspoonful on top of the casserole (make about 12). Bake uncovered at 350 degrees for 30 minutes. Cover and bake about 10 more minutes or until dumplings are done.


RIVEL SOUP

 

8 cups of chicken broth (I use canned)

1 onion, diced

2 Tablespooons dried parsley

2 cups flour

1 teaspoon salt

2 eggs, beaten

2 cans corn

2 cups chicken, cooked, and diced (this is optional)


Bring the broth to a boil.

In a bowl, mix flour, salt and eggs until you have a crummy mixture (not smooth, it will make crumbs). Rub mixture between your fingers over the broth dropping small amounts in. These are called rivels. They should not be big, that is a dumpling. Maybe pea size.

Another good trick is to add the dough to a ricer.  Press through about 1/4 inch of a time and trim with a butter knife.

Add corn and cook about 10 - 15 minutes.

If you want, add the chicken just before you take it off the stove.


BROWN SUGAR PIE

3 eggs, beaten
3 cups brown sugar
8 tablespoons butter or margarine
1 cup milk
3 tablespoons flour
Two 9-inch unbaked pie shells

Mix eggs with brown sugar, butter and milk. Add flour and mix well. Pour into 2 unbaked pie shells. Bake at 350° for approximately 1 hour or until knife inserted in center comes out clean.
